About Chlorogenci Acid

Compounds containing hydroxyl group and catechol hydroxyl group are soluble in water, ethanol, acetone and other solvents, slightly soluble in polar solvents such as ethyl acetate, and insoluble in lipophilic solvents such as chloroform and ether. Caffeine is a pseudo-alkaloid derived from purine compounds. Its molecular structure contains four nitrogen atoms. However, due to the influence of electron absorption of ortho-carbonyl group, its alkalinity is weak and it is not easy to combine with acid to form salt. In the free state, caffeine dissolves in organic solvents such as chloroform, ether, acetone, alcohol or benzene. Therefore, different solubilities of chlorogenic acid and caffeine in solvents can be used to remove caffeine and extract chlorogenic acid.
